Vegan Virgin Eggnog Recipe

Ingredients:

  • 3 cups almond milk (or any non-dairy milk of your choice)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/3 cup maple syrup or sweetener of choice (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg, plus extra for garnish
  • 1/8 teaspoon ground cloves or allspice
  • Pinch of salt

Optional:

  • Whipped coconut cream for topping

Instructions:

  1. Mix Ingredients: In a large mixing bowl or blender, combine almond milk, coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, cloves or allspice, and a pinch of salt.
  2. Blend: If using a blender, blend the mixture for about a minute until all ingredients are well combined and the mixture is slightly frothy. If mixing by hand, use a whisk to thoroughly combine all ingredients.
  3. Chill: Refrigerate the mixture for at least an hour or two. This allows the flavors to meld together and the eggnog to chill thoroughly.
