Vegan Virgin Eggnog Recipe
- 3 cups almond milk (or any non-dairy milk of your choice)
- 1 can (13.5 oz) full-fat coconut milk
- 1/3 cup maple syrup or sweetener of choice (adjust to taste)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg, plus extra for garnish
- 1/8 teaspoon ground cloves or allspice
- Pinch of salt
- Whipped coconut cream for topping
- Mix Ingredients: In a large mixing bowl or blender, combine almond milk, coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, cloves or allspice, and a pinch of salt.
- Blend: If using a blender, blend the mixture for about a minute until all ingredients are well combined and the mixture is slightly frothy. If mixing by hand, use a whisk to thoroughly combine all ingredients.
- Chill: Refrigerate the mixture for at least an hour or two. This allows the flavors to meld together and the eggnog to chill thoroughly.
- Adjust Flavors: Before serving, taste the eggnog and adjust the sweetness or spices to your preference.
- Serve: Pour the chilled eggnog into glasses. If desired, top with whipped coconut cream and a sprinkle of nutmeg.
